A spirit develops differently to an eau de vie, for which the distillate is extracted from the fruit mash by means of maceration. The fully ripe, crushed fruits are marinated in neutral alcohol. This happens in the Ziegler distillery on the roof of the sandstone building. Over time, the spirit dissolves the fruits: they give their wonderful flavour to the liquid. This creates a perfect, harmonious spirit. A perfect accompaniment to espresso, pastries, pralines or dessert.
